We didnโ€™t plan to build a dinner around olive oil

It just kept asking for more space. So we gave in.

Now, itโ€™s one night, one menu, entirely devoted to the drizzle that comes first

It begins with olive oil.

The drizzle before the sauce, the flavour that teaches us to taste.

Sharp, green, golden, alive with the land it comes from.

This night is for those who want to go deeper. To eat, yes, but also to understand.

Every dish, every pour, is a lesson in how one ingredient can carry memory, harvest, and tradition.

We love to eat. That is where everything starts.

But to share why we love it, that is where Da Guido is heading.

The Experience

Chef Mirco Cossavella will cook with oils chosen for their character: bold monocultivars, delicate blends, bottles pressed with care.

Sommelier Emanuele Luzi will pair each course with Italian wines that bring out the oilโ€™s depth, guiding you through bitterness, spice, and fruit, the many voices of extra virgin olive oil.
